Ever wanted to try a bite size order of everything off a menu? Dim Sum brunch could quite possibly be your ticket.

Every weekend our specialty Dim Sum chefs arrive at our Bellevue kitchen ready to prepare for two days of festivities. They unpack their knives, grab ingredients for the day, and create individually stuffed dumplings, and other goodies, ready to be steamed or baked for groups gathering over brunch.

Originally a Cantonese custom, Dim Sum brunch is a weekly tradition for many families and showcases many flavors that satisfy each group members' taste buds.

For the sweet and savory fans ::: barbeque pork stuffed baked hum bao pastries 


For vegetarian friendly fans :::  vegetables wrapped in a spinach infused dumping with sweet pan fried kabocha squash dumpling   


To satisfy a sweet tooth ::: steamed brown sugar sponge Malay cake

Snazzy Seattle Mixologists Cheers to 2012!

Wild Ginger mixed, mingled, and toasted with some of Seattle's top mixologists at Seattleite and Google Places' New Year Libations event on Thurs., Jan. 19 at Pravda Studios in Capitol Hill. To compliment some of 2012's hottest libations, Wild Ginger showcased some savory Dim Sum favorites, BBQ Pork Bao and pan-fried beef dumplings. Scallop and Chive Dumpling Recipe

Chef Jacky will be preparing the delectable, pan fried, Scallop and Chive Dumpling Dim Sum dish live on a segment of Q13 Fox News This Morning on Monday, July 25th at 9:00 a.m. We invite you to follow along with Chef Jacky as he demonstrates the proper techniques used to create a spectacular Dim Sum dish. To give you a head start, here is the recipe Chef will be following. And you thought that was it? Jake will be in the studio recommending the most fitting wine pairings for this particular recipe. This should not be missed.



Scallop and Chive Dumpling

Serving: 25 dumplings


For filling:

1lb fresh scallop, chopped
1/2 lb garlic chive, chopped
3g salt
8g sugar
15g potato starch
1/2 tsp oyster sauce
1/2 tsp fish sauce
1 tsp oil
1/2 egg white
pinch of white pepper
dash of sesame oil

Combine all ingredients together and mix well, set aside.

For wrapper:

11/2 cup wheat starch
1 cup tapioca flour
1/2 cup potato starch
boiling hot water

Combine all dry ingredients and mix well. To make the dough, slowly pour dry ingredients in hot water and mix to form a clay consistency.

To make dumpling (see chef Jacky Lo demonstrate on Q13 Morning News):

1. Take a piece of cherry sized dough and roll it into a ball, press the ball flat with a knife or rolling pin to form a round wrapper.

2. Place 1 oz of filling in the center of the wrapper, close the end by folding the edge into the center.

3. Steam the dumpling for 3-4 minutes, remove from steamer, and brush the dumpling with sesame oil, pan fry dumpling until slighty brown on both sides.

Serve while it’s hot.

Dim Sum Brunch at The Bravern in Bellevue

Saturday 11:30 am to 3:00 pm and Sunday 12:00 pm until 3:00pm

Originally a Cantonese custom, dim sum is inextricably linked to the Chinese tradition of "yum cha" or drinking tea. Teahouses sprung up to accommodate weary travelers journeying along the famous Silk Road. Rural farmers, exhausted after long hours working in the fields, would also head to the local teahouse for an afternoon of tea and relaxing conversation.

In the west, dim sum came about as a natural result of 19th century Chinese immigrants - most of who were from the Canton region - settling on the East and West coasts. Some gourmands believe
that dim sum inspired the whole idea of "brunch" - combining breakfast and lunch into one large midmorning meal. It is true that the word brunch only came into existence in the late 1800's.
